RUM CLASSICS

Rum has grown in popularity over the last decade in the United States with numerous Tiki bars opening up. 

​

You may have had frozen daquiri's from a slurpee machine, but Tiki drinks are incredibly complex, well balanced, and difficult to master. 

​

Here are some of my favorite rum classics.

Rum is the tonic that clarifies the vision, and sets things in true perspective.

Mojito

Rum, lime, simple syrup, mint, bitters

2 oz White Rum

6-8 mint leaves

3/4 oz simple syrup

1 oz lime juice

1 dash angostura bitters

Add mint and syrup into a shaker. Gently muddle the mint. Then add the remaining ingredients and short shake with crushed ice. Dump everything into a double rocks or highball glass.

​

Top off with crushed ice and garnish with a mint bushel and optional lime wedge/wheel.

​

(optional: top off with club soda)

Daiquiri

Rum, lime, simple syrup

2 oz Rum

1 oz fresh lime juice

3/4 oz simple syrup

Add all ingredients into a cocktail shaker and shake with ice. Strain into a glass. 

​

Garnish with a lime wedge or wheel.

Mai Tai

Rum, Orange Curaçao, lime,

orgeat, demerera 

2 oz Blended Rum

1/2 oz Orange Curaçao

3/4 oz fresh lime juice

1/4 oz orgeat syrup

1/4 oz demerara syrup

Place all ingredients in the cocktail shaker. Add a handful of crushed ice to the shaker and short shake. Dump all the contents of the shaker into a double rocks glass. 

​

Top off with crushed ice. 

​

Garnish with a used lime wheel and a mint garnish. This is suppossed to mimic and island with a tree. 

​

Talk about a tropical drink! This is the original Mai Tai recipe by Trader Vic.

Eggnog

Rum, Cognac, Bourbon,

cane sugar syrup, heavy cream, egg

3/4 oz Aged Rum

3/4 oz Cognac

1 tsp Vanilla Bourbon

3/4 oz cane sugar syrup

1 oz heavy cream

1 whole egg (yes the whole egg)

Add all ingredients into a cocktail shaker. Shake without ice hard for 30 seconds. Shake again with ice for 8-10 seconds. Dump out the ice and shake again without ice for about 15 seconds. Strain into a double rocks or hot toddy glass.

​

Garnish with grated nutmeg and cinnamon.

Honeysuckle

Rum, lime, honey syrup

2 oz White Rum

3/4 oz fresh lime juice

3/4 oz honey syrup

Add all ingredients to a cocktail shaker and shake with ice. Strain into a glass. 

​

Garnish with a lime wheel.

Dark and Stormy

Rum, lime, ginger syrup, soda

2 oz Black Rum

3/4 oz fresh lime juice

1 oz ginger syrup

2 oz club soda

​

Add all ingredients into a cocktail shaker, except the club soda, and short shake with crushed ice. Dump into a highball or double rocks glass. Add roughly 2 oz club soda and top off with crushed ice.

​

Garnish with a lime wheel and optional candied ginger.
